A Tuscaloosa food truck that specializes in creating gourmet grilled cheese sandwiches has opened its first brick-and-mortar location in the Ferguson Student Center on the campus of the University of Alabama.

Marek Benster, the manager of both the Cheese Louise restaurant and their food truck, said that they decided to open the stationary location after the university offered them the space.

"The university came to us and offered us the opportunity to take over the space that Topio's previously occupied," Benster said.

Cheese Louise has been in business since 2018 and has been selling their food on and around the university campus for over a year.

Their gourmet sandwiches amplify an American icon by swapping out cheap white bread and processed cheese slices with quality ingredients to create a better grilled cheese, like their Party Animal, which features Muenster cheese, buffalo chicken dip and chipotle sauce on toasted bread.

Benster told the Thread that setting up in the new location has been an adjustment, but a positive one.

"It's definitely different," said Benster. "[The restaurant] has a lot more space and it's a lot easier to make the food."

Benster also said that the new location has seen a lot of success since opening on campus earlier this summer.

The restaurant currently shares their new space with Blendz, a smoothie shop that also operates a food truck on campus.

Cheese Louise's brick-and-mortar location is open Monday thru Friday from 11 a.m. to 2 p.m.
