A new place to find sweet treats and the authentic taste of New Orleans' favorite desserts is set to open in downtown Tuscaloosa very soon.

Jaclyn Robinson, the owner and founder of Mo'Bay Beignet Co., said she plans to open a new location here around the end of June or early July.

The beignet company currently has four stores open, with its original, flagship location in Mobile, Alabama since February 2020. The new edition is going to be located in downtown Tuscaloosa at 401 23rd Avenue in Temerson Square.

"My franchisees, Hon and Brooks Beck, were the ones interested in opening a location in Tuscaloosa and I was absolutely all for it," Robinson told the Tuscaloosa Thread.

Mo'Bay Beignet Co. will sell fresh beignets along with a variety of signature dipping syrups and coffee, which they brew using their signature coffee roasts.

For the uninitiated, a beignet is a fried, dough-based pastry beloved in France and New Orleans that is flaky and crisp on the outside, soft and sweet on the inside and liberally covered in mountains of powdered sugar. At Mo'Bay, they are sold as a 3-piece, a dozen, or as minis.

"We serve authentic, hand-made beignets that are made from scratch all day, everyday. Every order is made to order. Nothing is frozen, so you can always expect fresh beignets. We also have special syrups, including a new seasonal syrup every month that you can dip your beignets in or pour over the top," Robinson said. "It's just an additional touch that people really enjoy."

Their signature syrups include the popular Buttercream and Cinnamon, while their signature ground coffee roasts include Pecan Praline and Coffee and Chicory, along with an authentic Cafe Au Lait.

"What we are about is making communities sweeter. Ultimately it's about bringing joy to a community and creating an atmosphere at our location so that when our guests come in, they have a sweet experience." Robinson said. "And hopefully being able to spend time with friends and family and create sweet memories gives everyone an experience that impacts the community in a positive way, too."

Mo'Bay Beignet Co. is expected to open at 7:30 a.m. Monday through Friday and a little later on Saturday and Sunday. On weeknights, the store will close at 9 p.m., and on Friday and Saturday it will close at 11 p.m.
